Oatmeal Banana Cookies
Ingredients:
3 Tablespoons coconut oil
1-2 T maple syrup
1 teaspoon pure vanilla extract
2 large eggs
1 large ripe banana, mashed
1 1/4 cups almond flour
2 cups gluten free old fashioned oats, rolled
1 cup walnuts and/or organic dairy free dark chocolate chips
Instructions:
- In a large mixing bowl, coconut oil and maple syrup mix until smooth. Add in vanilla extract and eggs. Next,
add the banana. Beat well. Batter will be clumpy.
- Slowly add almond flour mixture until just combined. Stir in oats and walnuts/chocolate chips.
- Put the dough in the fridge to let the dough cool. The dough is runnier than your average dough, so you
want it to firm up a bit so you’re cookies keep their shape.
- Let the oven heat to 350 degrees while the dough cools.
- Place the dough in balls on a ungreased non stick pan.
- Bake for 15-18 minutes or until golden brown.
- Cool for a few minutes and Eat! Best Enjoyed with Kids (or Kids at Heart)!
